Paleo Mashed Cauliflower

Cauliflower always seems to rise to the challenge in our quest for natural foods that are lower on the glycemic index.  

And, cauliflower makes a great substitute for the comfort of a generous serving of mash potatoes.

As we gravitate toward a diet with more natural fats, cauliflower offers to be our chosen fat delivery system! Loaded up with cheese, butter and cream, cauliflower shines with a few extra condiments, such as salsa or bacon and cheese.

Ingredients & Method

  • 1 Head Organic Cauliflower broken into florets
  • 2 tbsp. cultured grass-feed butter
  • 2 oz. cultured grass-fed cream cheese
  • 1 clove garlic minced
  • 1 tsp. sea salt
  • 1/4 cup grass-fed heavy cream

The Method

Steam the cauliflower florets for about twenty minutes until tender.

Transfer the steamed florets into the food processor and add the other ingredients.

Process for 15-30 seconds until smooth.

Serve as is for a substitute for mashed potatoes, or spice things up by adding hot sauce and salsa. Another choice is topping with shredded extra sharp cheeder and homemade bacon bits. Let your imagination be your guide!
