Lamb Loin Chops

We love lamb loin chops, grilled or pan-seared, oven-finished. The chops are small. It takes some skill to finish them rare. So, be careful!

Pan-Seared, Oven-Finished

First, we pan seared the chops for two minutes each side in a medium hot skillet with oil, butter, thyme and several crushed, unpeeled garlic cloves. Then, we oven finished the chops for about 5 minutes at 400, but keep your instant read thermometer handy. Allow to rest, and devour with a brandy pan sauce.
