Avocado Salsa

What better use of two ripe avocados than a cool fresh summer salsa? Fresh onion, tomato and garlic combined with chucks of creamy avocado bathed in tangy lime juice, topped off with cool cilantro. This recipe is easily personalized, simply adjust the ingredient amounts to your liking or add tasty extras like mango, hot peppers, cucumber or shrimp.

Avocado Salsa – The Ingredients

We coarsely diced the avocados, tomatoes, garlic and red onion stirring the two ingredients together in a small mixing bowl with the lime juice.

The Tacos

We threw together some tacos with and without meat and found the avocado salsa to be a flexible garnish for any and every combination of filling.

The Garnish

We added some grass fed ground beef sautéd in our taco seasoning mix.

Top off with a wedge of lime and chopped cilantro, the classic garnish for southwestern foods, but let your imagination be the guide.
